How to make Qi Doudou, a special snack in Northwest China

You must be careful when preparing the ingredients and clean up the sand. The amount of seasoning added must be appropriate. 1. Put 3 bowls of flour into a bowl, then pour butter (melted in advance) or vegetable oil, bitter bean powder, and salt into the flour. Dissolve the yeast powder in warm water and slowly stir it into the flour with chopsticks. Add water to the flour and knead it into a floc of moderate hardness and softness. Knead it into a dough and put it in a bowl. Seal the mouth of the bowl with plastic wrap, poke small holes in it for ventilation, and place it on the balcony to ferment.

2. After the dough is fermented, knead it until smooth and roll it out into the thickness of a dime.

3. Cut into long strips of uniform thickness (ignore my cutting)

4. Cut the noodles into small pieces of uniform size.

5. Turn on low heat, pour a little oil in the pan to prevent sticking, put the small noodles into the pan, stir-fry over low heat, separate the dough that sticks together with chopsticks during the stir-frying process, and gently shake the pan to ensure even heating. Generally, stir-fry for about 4 minutes. When the small noodles are fried with fire spots on both sides, or taste one directly, they can be removed from the pan when cooked. If you like to eat harder ones, you can stir-fry them for a while.

6. Finally, pour all the fried food back into the pot and stir-fry for one minute. Put it in the pot to cool down, put it in a fresh-keeping bag and store it in the refrigerator. You can take it out directly when you eat it.
