How to make spicy dry pot

1. Prepare the main ingredients: cut potatoes, carrots, bamboo shoots, celery, and beans into small pieces of about 5 cm in length, cut lotus root into slices of moderate thickness, cut dried tofu into 0.5 cm thick slices, cut crispy sausage from one end to 2/3 of the way, do not cut it off, and keep the crab sticks with the skin on for later use;

2. Prepare the auxiliary ingredients: cut the scallion into oblique sections, slice the ginger, smash the garlic cloves, cut the onion into shreds, cut the dried red pepper into two pieces, and set aside together with the Sichuan peppercorns;

3. Add a little more oil to the pan. When the oil is 80% hot, put in the potato strips and fry them on low heat. Then put in the carrot strips and fry them together. When the surface is golden and crispy, remove them and drain the oil for later use.

4. Pour water into the steamer. After the water boils, add the beans, celery and lotus root slices in turn and blanch them. Put those that are not easy to cook first and those that are easy to cook last. This way you can cook them at the same time and save a lot of time. When they are about 80% cooked, remove them and set aside. Finally, add the crispy sausage and crab sticks separately and blanch them slightly. Green bamboo shoots can be eaten raw, and dried tofu can also be eaten immediately. They are both easy to cook, so there is no need to blanch them.

5. Heat the oil in a pan again, add the onion, ginger and garlic and stir-fry until fragrant;

6. Add peppercorns and dried red pepper segments and stir-fry until fragrant;

7. Then add two tablespoons of bean paste and two tablespoons of dry pot ingredients and stir-fry until fragrant;

8. After the base is fried, add the green bamboo shoots and dried tofu and stir-fry evenly;

9. Add the fried potato strips and carrot strips and stir-fry;

10. After stir-frying evenly, add the blanched vegetables and stir-fry quickly over high heat;

11. Add onions and stir-fry quickly over high heat to bring out the onion aroma;

12. Add the crispy sausage and crab sticks at the end;

13. Quickly, you must be quick, stir well and then you can serve;

14. Sprinkle sesame seeds and coriander on the dish to enhance the flavor. I can’t wait to add a big bowl of rice to it.
