Angel Blueberry Cake Recipe

1. Prepare the ingredients, weigh the powder and liquid, separate the eggs and use only the egg whites, and keep the dried blueberries ready.

2. Put yogurt, 10 grams of sugar and cooking oil into a bowl, stir with egg yolk until blended.

3. Sift in the low-gluten flour and stir with a spatula to make it evenly mixed without any dry powder particles, making it more delicate.

4. Pour the egg whites into a bowl and beat with an electric whisk at high speed until there are coarse bubbles. Add 10 grams of the first sugar and continue beating.

5. Beat until fine bubbles appear and add 10 grams of sugar for the second time

6. Continue beating until it becomes fluid and pour in the last 10 grams of sugar

7. Beat until there are clear lines, and stop when you pull up the egg and it becomes an inverted triangle with a small pointed corner.

8. Add 1/3 of the egg whites to the yogurt paste and stir evenly with a spatula.

9. Pour it back into the remaining egg whites and continue to stir evenly.

10. Use an 8-inch chimney mold with a loose bottom and sprinkle the dried blueberries evenly around it.

11. Then pour in the egg white paste to smooth the surface, shake out the bubbles, and wrap a layer of tin foil on the bottom.

12. Put it into the preheated 170 degree oven, bake it in water for 60 minutes

13. Bake at 70 degrees for 10 minutes. When it starts to rise, change the temperature to 150 degrees and bake for another 10 minutes. Then change the temperature to 140 degrees and bake for 40 minutes. Change the temperature repeatedly to prevent the surface from coloring and keep the egg white white.

14. When the time is up, take it out and put it on the grill to cool naturally.
