Jing~Cocoa Cake (Rice Cooker Version)

1. Prepare all the ingredients needed to make the cake.

2. Prepare two clean, water-free containers. Crack the egg whites and yolks of 4 eggs into the two containers.

3. Beat the egg yolks until smooth.

4. Add 16g sugar, tea seed oil and milk to the beaten egg yolk and stir thoroughly (corn oil, peanut oil, olive oil, etc. are all fine)

5. After stirring, filter out the foam with a strainer, leaving a delicate egg yolk paste.

6. Sift in low-gluten flour and cocoa powder, stir gently until there are no small particles, and set aside.

7. Add a few drops of lemon juice to the egg white, beat it into foam, and add 13 grams of sugar.

8. Beat the egg white with a whisk until it becomes smooth and the color becomes lighter and whiter, then add 13 grams of sugar.

9. Continue to use the egg beater to beat the egg liquid until it becomes semi-solid, then add the remaining 14 grams of sugar.

10. Next, turn the egg beater to the highest setting and beat the egg white thoroughly. If you can pull out a sharp corner when you lift the egg beater, it means the beating is successful.

11. Take 1/3 of the beaten egg white, add it to the egg yolk paste, and stir up and down until it is evenly mixed.

12. After the cake batter is evenly mixed, pour it back into the container of beaten egg whites, and stir it up and down with the remaining 2/3 of the beaten egg whites until it is evenly mixed (do not stir in circles)

13. Preheat the rice cooker, brush the inner pot with oil, cover it with 3 layers of wax paper (to prevent the bottom of the cake from getting burnt), pour in the cake batter, hold the inner pot of the pot and shake it on the countertop a few times to shake out the big bubbles.

14. Press the cooking button, and the button will jump to keep warm after about three or four minutes. At this time, press a towel under the steam hole. Keep warm for 5 minutes, then press the cooking button again. After jumping to keep warm, wait for about 10 minutes and press the cooking button for the third time. Keep warm for another 10 minutes, and the delicious cocoa cake is freshly baked.
