How to make crispy mooncakes (egg yolk and red bean paste filling)

The method of making crispy mooncakes (egg yolk and red bean paste filling) is very simple. 1. Weigh the flour and other ingredients according to the amount, knead them into two kinds of dough: water-oil dough and shortbread dough, and let them rest for 20-30 minutes.

2. Peel the salted duck eggs, remove the egg whites and leave the yolks, then cut them in half with a knife. (I only have four salted duck eggs)

3. Divide the two kinds of dough into 12 equal-sized pieces.

4. Cover the pastry with water and oil.

5. Like making dumplings, do not leave the pastry exposed.

6. Use a rolling pin to roll it into the shape of a cow's tongue.

7. Roll up from the small end.

8. Repeat the process of rolling and curling.

9. Fold it in half and flatten it into a pancake shape.

10. Wrap the egg yolk with the bean paste, and then wrap the bean paste filling like dumplings. (Eight were filled with egg yolk, and the remaining four were filled with red bean paste)

11. Flatten into a slightly thick pancake and brush with egg yolk.

12. Sprinkle with black sesame seeds!

13. Bake in preheated oven at 200 degrees for 30-35 minutes.

14. After baking, cut one and pose for a photo!
