How to make mulberry mousse

1. Prepare the ingredients for the cake base.

2. Separate the egg white and egg yolk, melt the butter and milk in water, let them cool for a while, add them to the egg yolk and mix well.

3. Sift in low flour, stir evenly and prepare for the next step.

4. Add baking powder and white vinegar to the egg white.

5. Beat at medium speed until big fish eye bubbles appear, then add granulated sugar once (note that granulated sugar should be added in 3 times)

6. Beat until dry bubbles form and the whisk forms a small point.

7. Add one-third of the egg white to the egg yolk paste and stir evenly. Do not stir in circles or in a cross shape.

8. Pour all the egg mixture into the egg white and continue stirring crosswise.

9. Be careful not to draw circles, otherwise the cake will not be soft.

10. It can be stirred in a cross direction up, down, left, and right.

11. Pour the evenly mixed egg mixture into the mold.

12. Gently shake the mold to remove excess bubbles.

13. Preheat the oven to 160°

14. Bake in the oven at 160° for 50 minutes.

15. Now prepare the ingredients for the mousse.

16. Soak the gelatin sheets in cold water until softened. When it is twice as large, pour out the water.

17. Melt it in water and let it air dry before preparing for the next step.

18. Pour the milk and mulberries into a juicer and blend them.

19. Pour gelatin into the mulberry jam and mix well, then prepare for the next step.

20. Pour the whipped cream into a clean container and beat it. Add the granulated sugar in three batches and beat until it has a texture.

22. Take out the cake and let it dry. De-mould after drying thoroughly.

23. Cut into two pieces.

24. Spread the crushed biscuit crumbs evenly on the bottom of the mold about 2cm.

25. Put a piece of cake in it and place mulberries around it.

26. Pour in the mousse, then put in a piece of cake, then fill the mold with mousse again, shake it lightly to defoam, and put it in the refrigerator to refrigerate.

27. Add QQ sugar into water and boil until melted, then let it cool.

28. Refrigerate the cake until it is no longer sticky, take it out and pour in the QQ sauce

29. Refrigerate for 12 hours.

30. Take the mousse cake out of the refrigerator, decorate it yourself, blow the mold with a hair dryer to demould it.

31. The final product.
