How to make coconut bean muffins

Chinese people have always been particular about food. How well one eats is often linked to a person's living standard. We should not deal with three meals a day casually. 1. Mix low-gluten flour and baking powder, sift and set aside.

2. Beat the softened butter at room temperature with an electric whisk at low speed.

3. Add granulated sugar, mix the sugar and oil manually first, then use an electric whisk to beat at low speed to medium speed until it expands.

4. Beat the eggs first and add them to the butter in three batches. Beat quickly each time until completely blended before adding more.

5. The stirred mixture will be in a creamy state as shown in the picture.

6. Add 1/2 sifted flour and 1/2 coconut milk, and stir briefly with a rubber spatula.

7. Add the remaining flour, shredded coconut and coconut milk and mix well.

8. After mixing, the batter still looks rough.

9. Add candied red beans to the batter and mix well with a rubber spatula.

10. Use a spoon to scoop the batter into the mold until it is 70% full. Sprinkle some candied beans on the surface of the batter for decoration.

11. Preheat the oven to 170℃, bake on the middle layer for about 25 minutes with upper and lower fire.
