How to make preserved meat golden fried rice

1. Soak the bacon in warm water for two hours to remove excess salt, steam it for 20 minutes, let it cool and cut into thin slices.

2. Separate the egg yolk from the egg white, keep the egg yolk and use the egg white for other purposes.

3. Beat the egg yolks and chop the shallots.

4. Pour the beaten egg yolk into the bowl containing rice, and mix the egg yolk liquid with the rice until each grain of rice is coated with the egg yolk liquid.

8. Add salt and stir-fry until the rice is slowly dried. Add pepper and stir fry evenly. Add the fried bacon, snow peas and chopped shallots, remove from heat and quickly stir well before serving (no time to take a photo).
