2.2. Soak the sheep liver in water for two hours to remove the blood;

2.3. Cut the sheep liver into thin slices;

2.4. Add a little cooking wine, salt and starch to the lamb liver, mix well and marinate for ten minutes;

2.5. Add appropriate amount of water to the pot, bring to a boil, add the lamb liver, blanch it, remove it and drain the water;

2.6. Chop the onion, ginger and garlic, and slice the green pepper and carrot;

2.7. Add appropriate amount of oil to the pan, sauté onion, ginger and garlic until fragrant, then add carrot and green pepper and stir-fry for a while;

2.8. Add lamb liver and stir-fry until fragrant;

2.9. Add a little salt, oyster sauce and thirteen spices for seasoning, pour in a little water starch to thicken and serve.
