Grandma's Braised Pork with Dried Bamboo Shoots

The recipe of grandma's braised pork with dried bamboo shoots is easy, and the ingredients can be found everywhere in our lives. It is especially suitable for busy office workers.

1. Use rice washing water to soak the dried bamboo shoots at room temperature. Change the water once a day and soak until the dried bamboo shoots can be easily pinched through with fingernails. In today's weather, it takes about 1 week to 10 days to soak.

2. It is best to use high-quality pork belly with alternating fat and lean meat, and cut it into slightly larger pieces.

3. Blanch it in cold water, wash it and drain it.

4. The seasoning should not be too complicated to highlight the aroma of the dried bamboo shoots. Just use some onion, ginger, star anise, peppercorns, cooking wine, rock sugar, light soy sauce and dark soy sauce.

5. Heat some oil in a pan over low heat, slowly dissolve the rock sugar and fry until it turns dark brown.

6. Add the blanched pork belly, stir-fry and coat with sugar sauce.

7. Add all the seasonings and stir-fry for 5 minutes.

8. Add enough water, bring to a boil, and cook over high heat for half an hour.

9. Turn to low heat, cover and cook for 1 hour.

10. Now slice the soaked bamboo shoots into thin slices. Use an inclined blade to completely destroy the fiber tissue of the bamboo shoots so that the slices will be crisp and tender.

11. When the meat is cooked enough, add the bamboo shoots. If you like spicy food, you can add some dried red peppers. Cook on medium heat for about 30 minutes, then increase the heat to high until the soup is thick.

12. Sprinkle some chopped green onions on top and serve.
