What are the methods of steaming soft-shelled turtle?

Steaming soft-shelled turtle is the most common way to eat it, but if you want to truly enjoy its delicious flavor, you still need to follow certain steps and techniques. Method 1:

1. After slaughtering the turtle, blanch it in boiling water until the outer layer changes color and wrinkles, then remove it, scrape off the black substance and old skin on the turtle with a knife, remove the claws and tail, remove the internal organs and yellow croaker, wash and chop into small pieces;

5. Finally, pour the minced chicken into the turtle soup and bring to a boil.

Accessories: ham, dried mushrooms, pork, garlic, onion, ginger, white pepper, pepper, chicken fat, sesame oil;

practice:

1. Clean the turtle, scald it with boiling water, remove the shell, chop it into 2.5 cm square pieces, wash it, drain the water, marinate it with cooking wine and salt for 10 minutes, filter out the salt water, take a steamer, put the cover shell in first, then the turtle;

2. 3. Steam the ingredients in the steamer until they are soft, take out the onion, ginger and fat, pour the turtle into a bowl, use chopsticks to arrange the head, tail and four legs, cover the turtle shell, leaving a small part of the head, tail and legs exposed in the soup, and drizzle with chicken oil.
