1. Prepare eggs, tin foil, water, and salt. Crack the eggs into a bowl and fill half of the eggshell with water. Pour 4 eggshells of cold water into two eggs.

2. Then add a little salt and stir evenly, skim off the foam, wrap it with tin foil, cover the pot, and steam it in the pot for about 5 minutes.

3. Because it is wrapped in tin foil, moisture can be prevented from entering the egg liquid, making the egg custard tender and delicious.

1. Crack the eggs directly into a bowl, then add salt, stir evenly in a clockwise direction with chopsticks, then slowly pour the boiled water into the egg liquid, stirring evenly while pouring.

2. Then sift the egg liquid twice, put it in cold water, turn it upside down on a plate when steaming, or wrap it with plastic wrap, boil the water over high heat and steam it over medium heat for ten minutes

3. After steaming, season with light soy sauce according to your preference, so that the steamed egg custard will be shiny and glossy.

How to steam smooth and delicate egg custard?

If you want to steam a silky and delicate egg custard, you must pour in warm boiled water, or cold boiled water, but never raw water. The egg custard steamed with raw water is not tender and smooth, while hot water will easily turn the egg liquid into egg flowers. In addition, the amount of water should be 1.5 times the amount of egg liquid. If you put in too much water, it will easily affect the formation of the steamed egg, but if you put in too little water, it will easily make the egg custard particularly dry and taste bad.

The egg liquid must be filtered and the small bubbles on the surface skimmed off. Only in this way can you steam a smooth steamed egg. Before steaming, wrap it with plastic wrap, or cover it with a plate or lid to prevent moisture from entering the egg liquid and creating an uneven surface. Finally, steam it over medium or low heat. If the heat is too high, honeycomb egg custard will form. You only need to master these few points to steam out fresh, tender and smooth egg custard.
