How to stir-fry pork kidneys

3. Go to the market and buy some fresh pork kidneys. After returning home, slice the pork kidneys, remove the kidney smell, wash them with water, cut them into strips and set aside. Slice the hot and red peppers, and chop the onion and ginger for later use. Heat oil in a pan, put kidneys in when it is 50% hot, fry until cooked and remove from pan. Leave some oil in the pan, add scallion and ginger when it is 50% hot and stir-fry until fragrant. Add the kidneys and stir-fry over high heat for about 30 seconds, then add cooking wine and soy sauce. After that, you can add red pepper, sharp pepper, etc. and stir-fry until fragrant, then add a small amount of salt, MSG and sugar to adjust the taste. Add water and starch to thicken. Kidneys are easy to cook, so don't fry them for too long. Remember to always stir-fry over high heat.
