How to make Indian flatbread

1. Mix the dry and wet ingredients together

2. Stir the dough until the surface is smooth, add butter, and stir until the dough is pulled apart to form a mask.

3. Ferment at room temperature 30°C for 50 minutes

4. Divide into 200g pieces, roll into balls, and relax for 30 minutes

5. Roll out the dough into long strips

6. Put it in the baking tray and ferment for 30 minutes at 30℃ and 75% humidity.

7. Brush the surface with olive oil

8. Bake at 210℃ for upper fire and 180℃ for lower fire for 15 minutes
