How to make rice noodles?

1. Materials

One piece of rice noodles per person, some pork, 3 chicken gizzards, vegetables: one head of lettuce or some Chinese cabbage, preserved vegetables, dried squid head

1. Soak the rice noodles in cold water. Chop the meat, cut the chicken gizzards, and wash the vegetables

Then add the vermicelli and vegetables. The vermicelli will be cooked after boiling for a few minutes.

4. The difference between rice noodles and rice vermicelli

Rice noodles are thread-shaped foods made from high-quality rice through processes such as fermentation, grinding, filtering, steaming, and pressing.

Although rice noodles and rice vermicelli are both made of rice, there are huge differences in their appearance and taste.

The rice noodles are thin and chewy after being cooked. It is usually produced in Yunnan. The smoothness of the rice noodles is indescribable, and its main flavor is the umami flavor of the soup. Whether the rice noodles are delicious or not depends mainly on the bowl of soup. The soup is made with fat chicken and it is best to have a clear and transparent texture. The soup is very thick and covered with floating oil. It can maintain a relatively high temperature, which is said to be above 170°C. Raw meat slices, mullet slices, ham slices, liver slices, magnolia slices, etc. are then put into the boiling soup. After the lettuce changes color, bean curd, leeks, peppers, onions, etc. are added. Finally, rice noodles are put in and mixed with the food. Or you can take the rice noodles, dip them in the soup and then eat them. The taste is extremely sweet and unique.

Rice noodles can be divided into coarse and fine types. The fine ones are called "cooked noodles", but no one knows what the story behind this is.
