How to cook bucket chicken?

1. Ingredients

1500g hen, 10g Sichuan pepper, 10g star anise, 20g salt, 60g rice wine, 70g green onion, 50g ginger

2. How to make barrel chicken

1. Kill the hen, remove the feathers, remove the internal organs, wash it, chop off the claws, remove the large joints on the lower half of the wings, make a 4.5 cm long crescent-shaped opening under the right wing, push your fingers inward to find three ribs, and use your index finger to stir around the internal organs and take them out;

2. Open the back of the neck, take out the crop and rinse it clean;

3. The two thighs were broken at the base and tied with ropes;

4. Wrap the star anise with gauze;

5. Put some peppercorns and salt in the chicken stomach and shake it to make the salt and peppercorns soak evenly;

6. Fold the washed lotus leaves into 6 cm long and 3 cm wide pieces, insert them into the chicken from the cut edge to support the chicken tail;

7. Use a sorghum stalk to support the lotus leaf with one end and the chicken's back with the other end to make the chicken round;

8. Put the white brine pot on the fire, bring to a boil and skim off the foam. Put the bucket chicken in and blanch it, then tighten the skin and put it back into the pot. Add star anise, rice wine, green onion and ginger. When the soup boils, move to low heat and simmer for about half an hour. Take it out and it’s done.
