How to make mung bean pigeon soup?

Mung beans and baby pigeons are stewed together to make soup, which has the effect of clearing away heat, detoxifying, relieving summer heat and promoting diuresis. Pigeons also have the effect of replenishing qi and benefiting blood. The important thing about mung bean and pigeon soup is to pay attention to the stewing time so that the nutrients of both can be fully integrated into the soup and easier for the drinker to absorb.

Suckling pigeon and mung bean soup. Mung bean clears away heat and detoxifies, relieves summer heat and promotes diuresis, while squamous pigeon has the effects of regulating essence and replenishing Qi, treating sores and detoxifying. Adding tangerine peel, it is very effective in removing sore and blood toxins, treating skin itching caused by excessive sweating in hot weather, or skin allergies caused by eating too much seafood and lychees.

1 baby pigeon (weighing about 250-300 grams including hair), 200-250 grams of mung beans, half a piece to one piece of dried tangerine peel (dried).

Clean the pigeon and chop it into large pieces, wash the mung beans, and soak and wash the tangerine peel. Put all the ingredients into a pot, boil over high heat, then simmer for 3 hours over low heat. Use 10 bowls of water to reduce it to 6 bowls of water. Finally, season with salt. It is served. It can be consumed by 5 to 6 people. Changshu's teachings:

1. Fat baby pigeons are better. If you can buy a 400-gram baby pigeon, it will be even better. Do not use old pigeons because the bones of old pigeons are hard and the soup made from them will not be as sweet as that of baby pigeons. Baby pigeons have tender meat and are easier to cook until the meat is tender and even the bones are edible.

2. It is best to choose fresh, shiny and green mung beans, and use enough of them so that the therapeutic effect can be prominent. Some people worry that eating too much mung beans will cause the body to suffer from the coldness, but since pigeon soup is neutral in nature, and blood toxins and acne toxins in the human body are mostly caused by weak lungs, tangerine peel can regulate qi, resolve phlegm and nourish the lungs, so this soup is suitable for men, women, young and old.

3. During the cooking process, you can skim off the mung bean skins floating on the surface of the soup, but the mung bean skins have the effect of clearing away heat, so usually they do not need to be removed.

4. If more than one person is drinking, add 500 grams of wild amaranth heads and 250 grams of pork bones or ribs, wash them and cook them together with the above ingredients, using 13 bowls of water to reduce it to 6 to 8 bowls of water, which will have a better detoxifying effect.
