Mom's Beef Chili Sauce

1. Mom started working at seven in the morning, chopping 4 kilograms - a large basin of red peppers. When I got home, this huge project was almost completed. Chop two heads of garlic and about 150 grams of fresh ginger. You can add more according to your taste, and chop the homemade dry bean paste.

2. The black stuff is homemade broad bean paste. Fennel, salt, soy sauce, cooking wine, oil and other seasonings have been added during the brewing process. Chop the beef into small pieces, and add sesame seeds and peanuts according to your needs.

3. Wash, fry and crush the peanuts and sesame seeds. My sister thinks some crushed pieces will make it more fragrant.

4. Turn on the heat and pour in cooking oil. (Don't be afraid of adding too much. My mother used 500 grams of oil for one kilogram of peppers. At my request, she reduced it to 400 grams. After they were cooked, I found that more oil was better: the red oil covering the sauce makes it easier to preserve freshness.) When the oil is hot, pour the diced beef into the pan and stir-fry until the water is dried up.

5. After blanching the beef, add ginger and minced garlic and stir-fry until fragrant. Adding a little vinegar and pepper can enhance the flavor.

6. Add the chopped bean paste and continue to stir-fry for ten minutes before serving. Because there is no moisture left, be sure to turn it over frequently to avoid sticking to the pan.

7. Wash the pot, heat the oil, pour in the chopped red pepper and stir-fry until the water is dry, adding salt in the meantime. This process was the most time-consuming. My poor old mother stood by the stove for half the afternoon in the hot weather.

8. Pour the freshly fried beef and bean paste into the dried red pepper sauce, add the crushed peanuts and sesame seeds, stir-fry for five minutes and turn off the heat.

9. Look, the red and fragrant beef with red pepper sauce. Eat it while hot, mix it with steamed buns, noodles, or use it as a seasoning when cooking. It’s delicious!
