How to make carrot and tofu dumplings

Carrots are rich in vitamin A. Many foods can be eaten in a variety of ways, and carrots are no exception. Tofu has a low fat content, and the two can be used together to make dumpling fillings, which is also a relatively novel way of eating them. Dumplings are simple to make, and the fillings are even simpler to prepare, making them very homely.

1. Chop the carrots into small pieces, boil them in a pot for a while, then remove from heat and squeeze out the water. Cut tofu into pieces and blanch them in boiling water. Crush the tofu, carrot cubes, and minced meat (it’s best to have half fat and half lean meat), add appropriate amounts of salt, chicken powder, and pepper powder, mix together, start making dumplings, and you’re done.

2. Cut the carrots into shreds and cook in boiling water until soft. Rinse the spinach. The tofu should be chopped into small pieces, preferably the size of soybeans. Too much whole or too much small pieces will affect the taste. Put it in a hot oil pan and stir-fry. When the tofu turns slightly yellow and the moisture is basically absorbed, add a little five-spice powder. No other seasoning is needed, especially don't add salt when stir-frying tofu. Put the tofu into a container and set aside. Add oil again and sauté chopped green onions. This is the most important step in seasoning. If the chopped green onion is over-fried, it will taste bitter. If it is fried too tender, the green onion will taste too strong and not fragrant. Fry all the chopped green onions until they are browned but not black. Chop the carrots and spinach, filter out the water, put them into the same container with the minced tofu and chopped green onions, add a little sesame oil and some salt, mix well, and the filling is ready. Carrots absorb salt more, so the amount of salt needed is slightly more than other vegetarian fillings.

3. Chop the lean meat and garlic together, add the radish slices and chop them. The radish slices need to be blanched in advance. Then add the spinach and chop them. Then add the tofu and shrimps, add oil and salt, stir well, then add the eggs and stir well. Wrap it with dough and put it into the pot to cook. At this time, use the time to prepare the soup. Add soy sauce, lard, and green onion to boiling water. After it is cooked, scoop it out and put it into the soup.
