Rye Caraway Baguette Recipe

1. Combine warm water, salt, yeast and caraway seeds in a large container. The yeast does not need to be completely dissolved.

4. Refrigerate for 24 hours and take out before making bread.

5. Shape into a baguette and put it into a baguette mold. I put baking paper on it. Although it is a non-stick mold, I have tried putting it directly in and brushing it with oil, and it was all stuck and couldn't move. To be on the safe side, I now put baking paper on it. Relax for 2 hours.

6. If you use a baguette mold, you don’t need a baking stone. Place a baking rack in the middle layer of the oven, place an empty baking tray underneath, preheat to 230 degrees, place the baguette mold on the baking rack, quickly pour a cup of boiling water on the baking tray, and close the oven door to retain the steam. Bake for about 30 minutes or until the bread is firm and brown. Remove the baguette and place it on a rack to cool, then slice it before serving.
