How to cook fish-flavored eggplant mushrooms

1. Remove the stems of eggplant and king oyster mushroom and wash them. Crush the garlic and mince the pepper.

2.1 Heat the oil in a pan, place the eggplant and king oyster mushroom slices on the bottom of the pan, and fry slowly over medium heat. Drizzle another layer of oil over the surface of the food.

3.2 Peel off the eggplant skin and cut the eggplant and the king oyster mushroom into thick slices (0.8-1cm thick) diagonally. Sprinkle appropriate amount of salt, mix well and marinate for half an hour.

4.1 Take a small bowl, add 1 spoon of soy sauce, 1 spoon of vinegar, half a spoon of sugar, 1 spoon of starch and 3 spoons of water to mix the sauce.

5.2 Use chopsticks to turn the mushrooms over during the frying process until they become soft and slightly browned on both sides. Add minced garlic and pickled pepper and stir-fry evenly.

6. Fry the eggplant and king oyster mushroom until fully cooked (the eggplant can be easily torn apart with chopsticks), add the fish sauce and bring to a boil, stirring evenly.

7. Serve.
