How to make spicy lotus root dumplings

1. Chop lean meat or pork belly into stuffing, add salt, cornstarch, cooking wine, pepper and a little MSG to the stuffing and mix well. It is best to stir in one direction and let it stand for 30 minutes.

2.1 Wash and peel the lotus root, remove the two ends, and leave only the middle part of uniform thickness.

3.2 Add appropriate amount of water, a little salt and baking powder to the flour, and beat it into a thin paste with a whisk. The thickness of the batter is controlled by yourself, I personally like it thinner. This kind of lotus root clip has small holes that can be seen, which is very beautiful.

4.1 Take out two adjacent pieces of lotus root one by one, scoop a small amount of meat filling with a spoon and put it in the middle of a piece of lotus root. Press the meat filling lightly with the back of the spoon to make it evenly spread on the lotus root slices.

5.2 Cut the lotus root from right to left into 0.2 or 0.3 cm thick slices. Do not mess up the order of the lotus root slices from right to left.

6.1 Press down with the back of the spoon again to make the lotus root close to the meat filling, and a raw lotus root sandwich is ready.

7.2 Place another adjacent piece of lotus root on the meat filling.

8. Put the lotus root clips into the paste and coat them with a thin layer of paste.

9. Heat oil in a pan and fry the lotus root cakes.

10. When the lotus root cakes float up, pick them up and use oil-absorbing paper to absorb the oil on the surface (to make spicy lotus root cakes, fry them once).

11. Leave a little bit of oil in the pan, add ginger, minced garlic and dried chilies and stir-fry over low heat until fragrant, then add the fried lotus root and stir-fry over high heat. Add salt to taste and stir-fry until the lotus root becomes dry and tasty. Add chopped green onion, pepper and salt and stir well.
