Pear paste, a famous Shanghai delicacy, is a food that moistens the lungs because the main ingredient of pear paste is duck pears, and the pear itself has the function of clearing away heat and detoxifying, moistening the throat and relieving cough. Using pear paste, old ginger, honey and other ingredients to make delicious pear paste has many benefits to the body and also has a good cough-relieving effect for friends who have coughs.

Method 1

Ingredients: 6 duck pears, 80 grams of dried red dates, 150 grams of rock sugar, 20 grams of old ginger, and 80 milliliters of honey.

1. Wash the dried red dates, cut them in half and remove the cores. Peel the ginger and cut it into thin strips. Peel the pears, place a grater on the pot, and grate the pears into pear puree and pear juice.

2. Put the pitted red dates, shredded ginger and rock sugar into the pot together with the pear puree and pear juice.

3. Cover the pot and cook over low heat for about 30 minutes. Then scoop out the pear puree with a colander and press it with another spoon to squeeze out more pear juice.

4. Throw away the squeezed pear residue, red dates and shredded ginger, leaving only the pear juice in the pot. Continue to simmer over the lowest heat for about 1 hour until the pear juice thickens, then turn off the heat and let cool.

5. Add honey to the cooled pear juice, mix well and store in a sealed jar.

Method 2

Ingredients: Peel and cut six pears into pieces, squeeze out about one bowl of juice, 100 grams of dates, 100 grams of ginger, 100 grams of rock sugar, 100 grams of lily, and 200 grams of honey.

1. Pour the pear juice and rock sugar into a stainless steel pot. Wash the jujube and cut it into pieces. It is better to remove the core so that more nutrients can be boiled out. Slice the ginger and put them all into the pot. Add a cup of water, bring to a boil over high heat, and simmer over low heat.

2. When half of the juice is left, add the washed lilies and simmer for another 15-20 minutes.

3. After filtering, only half a bowl of juice is left. From a technical point of view, it is very difficult to make homemade soup to a thick consistency in the final step, so as long as the active ingredients are dissolved into the soup, it is fine. There is no need to be too demanding about the consistency of products sold outside. If you don’t like spicy food, you can use less or no ginger.

4. When the juice cools down a little, mix it with honey.
