Main ingredient: 300g yellow croaker.

1. Clean the yellow croaker and make a few cuts on its back. Add Huadiao wine. Add a pinch of salt. Marinate for a while. Sprinkle with dry starch.

2. Fry in a frying pan until golden brown. Drain the oil. Heat the pan, pour in oil, add onion, ginger and star anise, and stir-fry. Pour in Lao Gan Ma bean paste. Pour in sweet noodle sauce.

3. Add enough clean water. Add salt. Add Huadiao wine. (Cooking wine) Add rock sugar.

4. Stew until the soup is thick and almost dry.

5. Pickle the yellow croaker in advance to remove the fishy smell.

6. Pat the starch on both sides to lock in moisture in the fish, making the surface crispy and the inside tender. Lao Gan Ma bean paste is full of flavor and slightly spicy, and is appetizing and goes well with rice. In order to remove the fishy smell, you can use cooking wine instead of Huadiao wine.
