1. Chop the sheep tail bone into 4-5 cm segments, add clean water to cover the surface, and add 5 peppercorns and 15 ml cooking wine and soak for 15 minutes. Heat the water in a soup pot, add 2 small pieces of scallion and 3 slices of ginger and bring to a boil. Pour out the water used to soak the lamb bones and blanch the lamb in the boiling water. Wait for the sheep bones to change color. Do not turn off the heat after the water boils. Take out the sheep bones and then turn off the heat. Rinse them repeatedly with clean water 2-3 times.

2.1 After the lamb bones are fragrant, pour in cooking wine, soy sauce, add sugar and stir well, then continue to stir fry until it turns red, then add scallions and ginger slices and stir fry until fragrant

3.2 Add oil to the pan and heat it to 30% hot, add dried chili peppers and peppercorns and fry until fragrant, then add lamb bones and fry until the moisture is dry

4. Then pour boiling water over the surface, add cinnamon, ginger and other spices, boil over high heat, skim off any foam, cover and simmer over medium-low heat for 1.5 hours, finally add salt, coriander and other seasonings according to your taste
