How to make lean meatballs at home

1. Prepare the ingredients (the first step is to take the meat, which is to remove the fat from the meat you just bought, leaving only the lean meat. Then cut the lean meat into small strips or small pieces for easy chopping into meat sauce. At this point you should also weigh the meat so that you have a rough idea when adding starch.) I usually use a meat grinder to grind it into minced meat directly at the vegetable market, which is more convenient and saves time!

2. Add chopped onion, garlic, eggs, salt, chicken essence and a small amount of five-spice powder to the minced meat! (You can omit the chopped onion and garlic, and you can also add chopped ginger) Mix well with your hands and add a little baking soda.

3. Add a certain proportion of sweet potato flour to the meat! Use your hands here too! Knead vigorously (the ratio of minced meat to sweet potato flour is 1:0.65)

4. Cook until the starch is completely mixed with the meat, and only meat color appears without any pink or white visible, the meat slices are done. (I forgot to take a photo of what I made this time. This is the last time I made it without chopped green onions or garlic.) Let it sit for 1-2 hours before putting it in the pot.

5. Prepare chili pepper, ginger and coriander (these three are essential for people with strong taste)

6. There are also pickled mustard tubers and seaweed (depending on personal taste)

7. When cooking meat slices, boil the water first and use a spoon to put the meatballs into the pot! The water must be turned on! After a few minutes, you can see that all the meat slices in the water are floating up. Cook for a while.

8. Take out the meatballs and add appropriate amount of salt, chicken essence and white vinegar (the meatballs must be sour and spicy to have enough flavor)

9. Finally, pour in boiling water and you can eat it! (You don’t need water from the pot here. You can see that the meatballs will foam when they are cooked.)
