1. Wash the meat first.

2. Cut into thin slices and coat with cooking wine, salt, egg white and water starch.

3. Wash the yam clean.

6. Put water in the pot and bring it to a boil, then put in the yam and blanch it.

7. Drain the water.

8. Put oil in the pot and add onion and ginger to stir-fry.

10. Add carrot slices and stir-fry for 1 minute (the carrots have been blanched in water in advance).

11. Add yam slices and stir-fry.

12. Add black fungus, salt and pepper and stir-fry evenly.

13. Add MSG and sesame oil to season.

14. Remove from the pan and serve.
