How to make mushroom chicken clay pot rice

Claypot rice with mushrooms and chicken is a well-known specialty dish that is deeply loved by people. It tastes rich, has high nutritional value, and is relatively simple to make. You can prepare chicken legs and fresh mushrooms, and then you can make it. Eating it properly can have a good effect on regulating the body. As a home-made dish, you can choose some of your favorite ingredients according to your taste.

How to make mushroom chicken clay pot rice

1. First, soak the rice in water for 1 to 2 hours. The soaked rice is easier to cook, not easy to stick to the bottom, and the rice tastes better!

2. 2 large chicken legs.

3. Chop the chicken legs into small pieces, cut the mushrooms, and then cut 2 into flower pieces and set aside. Chop the red pepper and wash the green vegetables and set aside.

4. Put the good rice back into cold water and place your hand squarely on the rice, making sure it is above five fingers. The soaked rice has absorbed enough water, so there is no need to add too much water. Otherwise, if you put too much water, the rice crust will not form easily and the rice will be too soft. If you put too little water, the rice may not be cooked through, or it may be too hard and the rice crust will stick to the bottom.

5. After adding the water, add some vegetable oil and stir.

6. Turn the fire to a very low level as shown in the picture.

7. Heat the pan with cold oil and fry the peppercorns and dried chilies.

8. Add the chopped chicken thighs and stir-fry for 2 minutes. Add salt and black pepper, then add a small amount and simmer for 5 minutes.

9. At this time, the rice in the casserole is almost cooked. Open the lid, pour a circle of vegetable oil along the edge of the pot, and turn down the heat, as shown in the picture. Adding vegetable oil will make the rice crust crispier and more fragrant, and prevent it from sticking to the bottom of the pot. After pouring the vegetable oil, turn the heat to minimum, cover the lid, and simmer for another 10 minutes.

10. Add the mushrooms and stir-fry for 5 minutes. Then add the green vegetables and red pepper. Add MSG and serve.

11. Put the fried mushrooms and chicken on the stewed rice and serve.

Precautions

The casserole is very hot, so when you take it out, you should use two pieces of cloth to pad your hands to avoid burns. When serving the casserole, a mat should be placed at the bottom, as casseroles are most afraid of the stimulation of sudden changes in temperature. A boiling casserole can easily burst if it is exposed to cold water. Putting a mat at the bottom of the casserole before serving is also to avoid ruining the soup on the table at home.
