How to make French Opera House cake

Every time you enjoy a delicious dish, have you ever wondered how it is made? If I were in his place, would I be able to do the same thing? If you have this idea, then follow me to learn how to make French Opera Cake.

1. Mix the sifted flour, almond powder and powdered sugar together.

2.1 Separate the egg white and egg yolk of the remaining two eggs, beat the egg white until about 70%, and pour 15g of sugar in two times while beating.

3.2 Beat two whole eggs until the egg liquid dripping on the surface retains its shape and does not disappear within at least 10 seconds

4.1 Add the beaten egg whites into step 4, mix well, pour into a baking tray, put into the middle layer of the oven preheated to 200 degrees, and bake for 10-12 minutes

5.2 Add the dry powder in step 1 to the egg and stir gently.

6.1 Beat the remaining egg yolks in step 3. When the color turns milky white, continue to stir while pouring in the syrup in step 6. Pour the syrup slowly instead of pouring it all in at once.

7.2 Put in 100g sugar A on medium heat, then pour in 40ml water and cook until the sugar completely turns into liquid and starts to boil.

8.1 Pour the hot cream into the chocolate and butter B, stir evenly, and put the prepared chocolate sauce in the refrigerator

9.2 After adding the syrup, continue stirring for 5-10 minutes until the temperature reaches that of the butter. Pour in the butter A (165g) in 5-6 portions. Stir for 20 seconds each time before pouring in the next portion. Finally, pour in 3 spoons of espresso liquid (or melt 2 bags of instant coffee in 50ml of hot water to make espresso). Continue stirring until the butter sauce is very fluffy and put it in the refrigerator.

10. Cut the baked sea cake into 4 equal pieces

11. Put a piece of sponge cake first and apply some of the remaining coffee liquid on it

12. Spread butter sauce on the first layer, then put the second sponge cake on top, spread coffee liquid on it, and put chocolate sauce on it. Repeat this twice.

13. Spread chocolate sauce on the fourth sponge cake and cut it into rectangular strips. Sprinkle some cocoa powder on it. If there is any leftover butter paste, you can put it on top.
