15. After putting the fish in, don't move it to avoid the starch on the fish pieces sticking to the pot. Cover the pot and simmer on low heat for 8-10 minutes. Open the lid of the pot and taste it. If it is not salty enough, add appropriate amount of salt and MSG. Then, take out all the fish pieces, garlic and other things in the pot and put them on a large plate. Don't scoop out the soup!

16. Turn to high heat and add water starch (add water to dry starch, about half a bowl of water, and the starch and water must be fully blended) into the pot with the remaining soup in the pot. While adding, stir constantly with a spatula to allow the starch and soup to fully blend, until the soup becomes thick.

17. When the soup becomes thick, turn to low heat, add chopped shallots, turn off the heat and remove from heat.
