Spicy braised hairtail fish recipe

1. Prepare the seasoning: chili pepper, pickled pepper, garlic, green pepper, Korean hot sauce

2. Wash the hairtail and chop it into small pieces.

3. Add appropriate amount of starch to the chopped hairtail and mix well.

4. Put more oil in the wok and heat it to 80% hot. Put your hand about one foot above the wok and feel it. If it feels very hot and slightly hot to the touch, it is ready.

5. Put the hairtail pieces in one by one. If you are a novice and are afraid of oil splashing, it is best to turn down the heat.

6. Fry until the edges of the hairtail pieces turn brown.

7. Remove the fried hairtail from the pan and pour out most of the oil in the pan, leaving only a little oil

8. Add pickled pepper, Sichuan pepper, millet pepper and Korean hot sauce and stir fry until fragrant

9. Add appropriate amount of water or broth and simmer for 5 minutes.

10. Add the fried hairtail, soy sauce, cooking wine and salt and simmer over high heat for 5 minutes.

11. Cook over high heat until the sauce thickens.

12. Heat the pot, add appropriate amount of sugar and vinegar, put in the cucumber and cook for one minute.
