How to make Xi'an Roujiamo

People eat a lot of food in their lifetime, and only delicious food that is cooked with care will make people linger. So, let me introduce to you how to cook Xi'an Roujiamo.

1. Prepare the required materials. Among them, one packet of stewed meat ingredients includes: 1 star anise, 1 small piece of cinnamon, 1 cardamom, 1 nutmeg, 1 small piece of ginger, 10 cloves, 20 peppercorns, 2 pieces of tangerine peel, 2 pieces of angelica, and 3 bay leaves.

2.Put yeast, vegetable oil and flour into a bowl.

3. Pour in warm water at about 40 degrees.

4. Use chopsticks to stir the flour into snowflake-like pieces.

5. Knead into smooth dough with your hands.

6. Cover with plastic wrap or damp cloth and leave to rise at warm room temperature until doubled in size.

7. Take out the fermented dough and knead it repeatedly until the surface is smooth.

8. Divide into 9 small doughs of about 80 grams.

9. Take a piece of dough, roll it into a round shape with a rolling pin, and use it to shape it into a round pancake with a diameter of about 10 cm.

10. No oil is needed in the non-stick pan. Put the dough into the pan and fry until both sides are golden brown.

11. Wash the pork and put it into the pot, pour in clean water (covering the surface of the ingredients), heat it over high heat and continue to cook for 3 minutes, then take it out, rinse off the floating foam on the surface with clean water, and discard the water used to blanch the pork.

12. Put the blanched pork into the pot, add enough water (covering the surface of the ingredients), boil it over high heat, then add salt, onion, ginger, light soy sauce, dark soy sauce, and rock sugar, then wrap the stewed meat ingredients with gauze and put them into the pot.

13. Cover with lid and simmer on low heat for about 2 hours.

14. Wash the coriander and green pepper and set aside.

15. Cut the stewed meat into small pieces and chop the coriander and green pepper into fine pieces.

16. Mix the minced meat with coriander and green pepper, and then add a little stewed meat broth. (If you like spicy food, you can add chili oil)

17. Cut the baked dough from the side with a knife.

18. Finally, put the chopped meat in the dough.

Xi'an Roujiamo may seem complicated, but if you actually try it, you'll find it's not difficult at all. The key is that you must master the specific steps and methods before you do it.
