Spicy braised beef rice noodles recipe

1.Cut the beef into pieces of appropriate size, wash away the blood, and drain for later use. Pour half a pot of water into the pot, boil it to about 70 or 80 degrees, then pour the beef in to blanch it. Don't boil the water before adding the beef, as that will make the beef tough. After the beef changes color, remove it from the water, rinse off the foam, and drain for later use.

2.121 Add appropriate amount of water and cooking wine and simmer until the water level is 1-2 cm higher than the beef. You don’t have to add cooking wine.

3.212 Wash the wok, heat it, pour in peanut oil, heat it to 80%, add ginger slices and stir-fry, then turn to medium-low heat, add all the spices, stir-fry until fragrant, add beef, turn to high heat, continue to stir-fry, after the moisture on the surface of the beef is fried dry, add Pixian bean paste, stir-fry until red oil comes out.

4. After the water boils, turn to medium heat and cook for about 30 minutes. There should be some soup left in the pot and the beef is chewy. Be careful not to leave too little water at the end; otherwise the beef will taste a bit tougher.

5. Add appropriate amount of salt and MSG, stir well, then put the beef into a suitable container and put it in the refrigerator or freezer after it cools down. If you need to freeze the beef, divide it into several small portions and freeze it. You can take as much as you want to eat. It can be stored for a very long time.

6.1 Pour rice noodles and cold water into the pot at the ratio of 1:3, boil for 3-5 minutes, and stir several times in the middle to prevent sticking.

7.2 According to the number of people eating, put appropriate amount of water in the soup pot, add appropriate amount of braised beef and soup to make the soup base. It does not take too long, about ten minutes will be enough.

8. Turn off the heat, cover and simmer for 3 minutes, then remove from the heat and put into cold water for later use.

9. Wash and cut the onions, ginger, garlic and green leafy vegetables and set aside. At the same time, bring another pot to boil water for boiling rice noodles.

10. Take empty bowls and put 2 grams of salt (according to personal taste), a little pepper powder, mashed garlic and MSG in each bowl.

11. After the water boils, you can blanch some green leafy vegetables first. Put appropriate amount of rice noodles into the pot.

12. When hot, remove from the heat and place in a seasoned bowl, add chili oil (optional).

13. Pour a large spoonful of beef soup over the rice noodles and sprinkle with green onions and coriander. It would be better if there were green garlic sprouts, so you don’t have to add chopped green onions.
