Bean Selection Choosing beans is very important, the quality of beans determines whether the tofu pudding is good. Choose soybeans that are 90 days into maturity. When selecting the beans, you can look at them under the light. If they are round in color, smooth on the surface and full in grains, and easy to crush, they are better. (2.5-3 yuan per pound of soybeans) 2. Refining 1. Soak the soybeans in water for at least 6 hours. It should not be soaked for too long in summer, but in winter when the temperature is not high, it can be soaked for 12 hours. The quality of water also determines the quality of soy milk, so the water cannot be too bad. After that, the soybeans should be washed 3-5 times. 2. Use 3250 grams of water for one pound of soybeans (maximum yield), the water ratio can only be less, not more; 1:6.5. 3. Grind into soy milk and bean dregs, and grind repeatedly twice. Three: Burning pulp When the soy milk is heated to 90 degrees, add 3.5 grams of compound soy product defoaming agent. Four: Stirring The batter should be stirred until the foam disappears, and the soy milk should be heated to 100 degrees, otherwise the temperature is not high and the tofu pudding will be difficult to shape. After the soy milk boils, let it sit in the pot for 1-2 minutes and scoop out the bean curd skin. Five: Dot pulp (lactone) First dissolve the lactone with a little cold water and pour it into a thermos bucket. Then quickly and evenly pour the freshly cooked hot soy milk into the bucket. No stirring is required. Let it sit for 30 minutes. 6. Preparation of brine: 1. Raw materials: 2500 grams of cold water or broth, 2 segments of green onion (white part), 2 slices of ginger, seasoning bag or gauze (can be used twice, 5 minutes for the first time and 10 minutes for the second time), 15 grams of tofu brain. 2. 5 jin of water, 31 grams of salt, 10 grams of chicken essence and MSG, 10 grams of MSG, 10 grams of MSG, 10 grams of oyster sauce, 3 grams of white pepper powder, and 5 grams of chicken juice. 3. Remove the seasoning packet 5 minutes after the water boils, then add seasoning. 4. After it is completely melted, add a little dark soy sauce to color it. 5. The brine is ready. 7. Preparation of marinade: 2. Raw materials: shredded tofu skin (0.1-0.2 cm in length, the thinner the better), shredded carrot, cut day lily into sections, and shredded black fungus. You can also choose side dishes according to your preference. 3. Prepare half of the marinade, pour the dishes in, bring to a boil, then add potato starch (cornstarch) dissolved in water, control the thickness, and the marinade is ready. 4. The finished product of tofu pudding: prepare blanching vegetables, coriander, shallots (chopped green onions, ginger and garlic), pickled mustard granules, and soybeans. 8. Steamed tofu pudding To steam a bowl of tofu pudding, let the soy milk cool completely, then scoop out the bean skin, pour the rennet into the cold soy milk, stir quickly and evenly, pour into each bowl, and steam for 10-12 minutes. In fact, the methods of making steamed tofu pudding and braised tofu pudding are basically the same. The only difference is the way of adding the soy milk. For tofu pudding, lactone is added to the freshly cooked soy milk, while for steamed tofu pudding, lactone is added to the cold soy milk. 9. Cost accounting A pound of beans can be made into 6-7 cm bowls, 12-15 bowls, and 10 bowls are common; A pound of soybeans costs 3 yuan, rent, water and electricity costs 3 yuan, and the loss is 2 yuan. 12 bowls are produced, and the average cost of each bowl of tofu pudding is 0.7 cents.
