How to make rainbow ribs

1. Evenly apply 15g of white wine (or cooking wine), 15g of salt, 15g of sugar, 25g of dark soy sauce, 25g of Lee Kum Kee barbecue sauce, and 25g of oyster sauce on the ribs and marinate for at least 2 hours (see Figure 1).

2.1 Take out the steamed ribs and do not throw away the gravy, set aside. Heat 2 liang of oil. When the oil temperature reaches 80%, put the steamed spareribs into the oil and fry until the spareribs are browned and then remove from the oil.

3.2 Chop the garlic into minced garlic, cut the green and red chili peppers into small circles with scissors and set aside. Place the marinated ribs in a steamer and steam for 1 hour (see Figure 2).

4. Heat some oil in another pan, add minced garlic, sauté until fragrant, then add cumin powder and chili powder, stir-fry until fragrant, then add green and red chili peppers. Pour the steamed gravy into the pot, add a small amount of light soy sauce and salt, season, boil over high heat for 10 minutes, and pour it on the fried ribs when the soup thickens.
