Spicy shrimp

Prawns are a popular choice for barbecue on summer nights, but as people pay more and more attention to food safety and health, more and more people prefer to make spicy prawns at home. In fact, from a health perspective or an economic perspective, it is more appropriate to make your own spicy shrimp at home. Moreover, with the abundance of online recipes and the convenience of choosing seasonings, you can make the same taste as at a barbecue stall even at home.

Start by preparing the shrimp:

1. Wash the shrimps.

2. Use kitchen scissors to cut off the shrimp whiskers, and you can also remove the sharp corners of the shrimp head. Because the cooked shrimps are very crispy, they can be eaten completely. The pointy tip of the shrimp head can easily hurt your mouth.

3. Cut from the spine behind the shrimp head to the tail of the shrimp. The abdomen of the shrimp is not cut open. I have seen it when I eat outside, so I won’t post pictures.

4. Put it in a basin, turn on the running water, and wash it several times. During this process, the shrimp thread on the back of the shrimp (the black, intestine-like thing, this is the part with the strongest muddy smell, so it is best to remove it) is washed away by the water. Wash it again, if there is anything that is not clean, pick it up with a toothpick and remove it with your hand. The shrimps are cleaned.

How to cook spicy shrimp

Heat the pan and add twice as much oil as you normally would for cooking. Add scallion, minced garlic and shredded ginger and stir-fry until fragrant. Add the peppercorns and finally the dried chili peppers.

Turn to high heat, pour in the processed shrimps and stir fry constantly. Do not add water during the whole process, otherwise the shrimp will not be crispy.

When the whole shrimp turns red, turn down the heat. Cover the pot and simmer for a few minutes, remember to stir a few times during the process.

When you see the shrimp skins are translucent, you can turn off the heat. I don’t add salt to this dish because the shrimps are sea shrimps, which have a salty taste and a slight sweetness of seafood.

Serve. Garnish with coriander and finally sprinkle with roasted white sesame seeds.

Modern medical research has confirmed that shrimps have extremely high nutritional value and can enhance human immunity and sexual function, nourish the kidneys and strengthen yang, and resist premature aging. Often eating fresh shrimp (can be fried, roasted, or stewed) with warm wine can treat symptoms such as kidney deficiency, fear of cold, fatigue, and pain in the waist and knees. If a woman has little or no milk after giving birth, grind 500 grams of fresh shrimp meat and drink it with hot rice wine 3 times a day for several days to stimulate lactation. Shrimp skin has a sedative effect and is often used to treat neurasthenia and autonomic nervous system dysfunction. Shrimp is a delicious food that can provide nutrition for the brain. Shrimp contains three important fatty acids, which can help people stay focused for a long time.
