1. Clean the fish, cut a few times on the fish, apply a thin layer of salt on it and let it firm up for at least two hours. Prepare ginger slices and scallions.

2. Make a sauce. The ingredients for a 1.5 catties fish are: a cup of water (about 150 ml), 2 tablespoons of sugar, 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of cooking wine, 1.5 tablespoons of vinegar, 1 tablespoon of honey, 1 tablespoon of sesame oil, a little white pepper powder (the smaller the fish, the less seasoning you need, you can also increase or decrease it according to your taste)

3. Sprinkle flour on the fish and shake off the excess flour

4. Fry in oil until both sides are golden brown. Remove from heat when the fish is about half done.

5. Use the remaining oil in the pan, add onion and ginger and sauté until fragrant

6. Put the fried fish into the pot and add the prepared sauce

7. Bring to a boil over high heat and cook for one or two minutes

8. Open the lid and turn to medium heat. While cooking, scoop up the soup in the pot with a spatula and pour it over the fish until the soup is dry. Sprinkle with chopped green onions and serve.
