How to make red bean matcha mousse

1. Prepare the ingredients for sponge cake

2. Melt the butter in milk and hot water (preheat the oven to 180 degrees)

3. Add sugar, salt and baking soda to the whole egg

4. Beat with a whisk until the color turns white and thick, and the dripping lines will not disappear immediately.

5. Sift in matcha powder and low flour

6. The egg beater can be stirred evenly without power supply

7. Add melted butter and stir quickly until evenly combined

8. Pour the egg batter into the mold and scrape the surface smooth.

9. Put it into the oven, 180 degrees, middle layer, the whole process takes about 20 minutes, depending on the temper of your own oven

10. Cut the cooled and demoulded cake into two pieces, and then trim the cake piece a little smaller.

11. Prepare the ingredients for red bean mousse

12. Soak the gelatin sheets in cold water until soft

13. Put the softened gelatin sheets into the milk and heat it to melt

14. Add fine sugar to the whipped cream and beat

15. Beat until about 60% distributed. The cream inside will still flow slightly when the container is tilted. Not too frothy, not too thick either.

16. Add red beans to the whipped cream and mix well.

17. Add the cooled gelatin milk mixture and stir quickly until evenly combined.

18. Put a piece of cake into the mold first

19. Pour half of the mousse liquid and then put a piece of cake on it

20. Pour the remaining mousse liquid, scrape the surface smooth, put it in the refrigerator, and refrigerate for more than 3 hours (mine was overnight)

21. Take out the cake and blow it with a hair dryer before removing it from the mold.

22.Sprinkle Matcha powder evenly on the surface
