How to make ginkgo

1.12 Set aside the raw materials. Forgot to chop the green onions.

2.21 Chop the winter bamboo shoots into small cubes, add appropriate amount of cooking wine to puree the pork with a fat-to-lean ratio of about 3:7, chop the green onions, and chop the tofu into small cubes.

3.1 Stir-fry the diced winter bamboo shoots for a while.

4.2 Put a little more oil in the pot, add pork and stir-fry until it changes color, add a little light soy sauce and cooking wine.

5.12 Add the diced tofu and stir-fry for a little longer to remove excess moisture from the tofu. Use a spatula to break up the tofu a little more while frying.

6.21 Add snow vegetable and stir-fry, then add appropriate amount of sugar and salt.

7.1 Set the fried stuffing aside to cool completely before use.

8.2 Finally, add chopped green onion and stir-fry for a few times and turn off the heat.

9. Mix the late rice flour and glutinous rice flour, the ratio I use is about 3:1.

10. When the water in the pot is about to boil.

11.1 Pour the fruit paste into the dry powder. (You can use less dry powder at first, and add more if it is not enough)

12.2 Take some of the mixed rice flour (I used about 1/3) and add it into the water, stirring until it becomes a thick paste. We call it fried fruit paste.

13. Knead into dough of moderate hardness.

14. Pinch off several small dough pieces. Cover the dough and small dough pieces that are not in use with a damp cloth, because the dough will dry out easily. But it doesn’t matter if it feels dry. It will become soft again after kneading it a few times.

15.1 Slowly pinch it into a bowl shape. Add appropriate amount of fillings.

16.2 Take some cooked lard and spread it on your hands (you can see that my hands are all shiny). When you are wrapping the dumplings later, you should also spread some lard on your hands from time to time. This will prevent your hands from getting sticky when you are wrapping the dumplings, and also make the outside of the dumplings shiny and beautiful after steaming. Take a small piece of dough, roll it into a ball and then flatten it.

17. Add appropriate amount of fillings.

18. Make a circle of pleats around the edge of the bowl.

20. Hold the bottom with your left hand, circle the edge with your right hand, rotate the bottom with your left hand, and open and close your right hand continuously, slowly rolling out a pointed top from the bottom to the top.

22. A reunion fruit is ready.

23. Let’s take a group photo.

24. After the water in the pot boils, steam the food for 7 or 8 minutes.

25. Turn off the heat, take out the food and fan it until there is no heat. It tastes good when it’s hot, and even better when it’s a little cooler and chewy, haha. It will become hard when it cools down, so just steam it.
