How to make raisin Swiss roll

1. Line a baking tray with baking paper

2. Separate the yolk and egg white

3. Add salad oil and water and mix well

4. Add 30g of white sugar and stir evenly until saccharified

5. Sift in the flour and mix until there is no dry powder

6. Add egg yolk twice and mix into egg yolk paste, set aside

7. Preheat the oven to 180 degrees. Add 60g of white sugar to the egg whites three times and beat with an electric whisk until 90% distributed.

8. Take a part of the egg white and add it to the egg yolk paste, mix it evenly with a spatula, and then mix the egg white and egg yolk paste evenly.

9. Pour into baking tray and shake twice to eliminate large bubbles. Place in the middle of the oven and insert another baking tray underneath. Bake at 180 degrees for 17-20 minutes

10. After baking, pat the cake surface with your hand. It is ready if it is not sticky and there is no rustling sound. Take out the baking tray without turning it upside down. Pull it out with the baking paper and put it on the drying rack to cool until it is cool, then tear off the baking paper.

11. Use a knife to make three marks at the beginning of the cake roll (do not cut it through, it will be easier to roll), spread mango jam on it, and sprinkle with raisins.

12. Roll it into a roll using a rolling pin, put it in the refrigerator for 30 minutes to set, and then slice it.
