How to make bamboo shoots and enoki mushroom soup

1. Prepare the necessary materials.

2. Soak the enoki mushrooms in light salt water for a while.

3. Remove the stems, wash and cut into small pieces.

5. Blanch the ingredients in boiling water.

6. Remove from the heat and drain.

7. Beat the eggs and prepare the water starch.

8. Add vegetable oil into the pot and heat it to 60% hot, then add shredded ginger and stir-fry until fragrant.

9. Add appropriate amount of water.

10. Add Svanson's rich stock.

11. Add soy sauce and salt and bring to boil.

12. Add enoki mushrooms, shredded tofu, shredded shiitake mushrooms and shredded lettuce and bring to a boil.

13. Then add pepper.

14. Drizzle in black vinegar.

15. Pour in water starch to thicken.

16. Skim off the foam and oil, pour in the egg liquid, serve in a bowl, sprinkle with coriander.
