1. Stir-fried lamb slices with coriander

Mix the mutton slices with a little soy sauce, cornstarch and cooking wine. Wash and cut the coriander into sections and set aside. Heat oil in a wok, add a little chopped shallot and shredded ginger and stir-fry until fragrant, pour in the lamb and stir-fry until it changes color, add chopped pepper and scallion segments, stir well, and add MSG to taste. Pour the coriander in and stir quickly a few times before serving.

2. Cumin Lamb

Cut the mutton into pieces not too small, about the size of a thumb. Add cornstarch, cooking wine, white pepper powder, cumin powder and salt and marinate for 20 minutes (you can add enough salt so that you don’t need to add salt later). Heat the pan and add about 2 tablespoons of oil (the amount of oil depends on how fat the mutton is. If it is fat, add less because a lot of oil will be produced during the frying process). Add the mutton and stir-fry for two minutes until the mutton changes color. Add appropriate amount of chili powder and cumin seeds and continue to stir-fry for about 1 minute before serving.

3. Stir-fried lamb with green garlic

A little salt, appropriate amount of light soy sauce, appropriate amount of cooking oil, a little sesame oil, a little sugar, and 1 spoon of dry starch. Cut the mutton into strips, add soy sauce, sugar, dry starch and a few drops of sesame oil, and mix well. Rinse the green garlic and cut into pieces. Heat the pan, add appropriate amount of oil, and stir-fry the green garlic until fragrant. Add the mutton and stir-fry quickly. When the mutton has basically changed color, add the green garlic leaves and continue to stir-fry. Add a little salt and water, continue to stir-fry, and serve when the water is dry.
