9. Pour a proper amount of oil into the pot. When the oil is warm, put the meatballs in one by one, knead them one by one, and fry them until the color of the surface becomes darker, then remove them from the pot.

10. Leave a little oil in the pot, add ginger slices and scallion knots when the oil is hot, pour in the meatballs after the aroma comes out, add salt, sugar, light soy sauce and dark soy sauce, bring to a boil over high heat, skim off the foam, then simmer over low heat, cover and cook for about 15 minutes until cooked through. Add chicken stock and mix well.

11. Wash the rapeseed hearts, pour some water into a cooking pot, add alkaline noodles after boiling, put in the rapeseed hearts, cook for a few seconds until they change color, then remove from the pot and rinse with cold water. After cooling, squeeze out excess water. Put the lotus root slices on a plate and place the rapeseed hearts on top.

12. Turn the wok to high heat to reduce the soup, add water starch in two batches, stir well, pick up the meatballs and place them on the plate, then use a spoon to scoop some soup on them.
