What is the method of making authentic Northeastern cold noodles?

Northeastern cold noodles is a local delicacy in the north. It is mainly made of noodles and other side dishes. It not only tastes cool and refreshing, but also makes people feel refreshed when eating a bowl of cold noodles in the hot summer. The method of making Northeastern cold noodles is also very simple. You can make it at home. It is cleaner and more hygienic. You can also add vegetables according to your personal taste.

How to make authentic Northeastern cold noodles

Prepare an appropriate amount of cold noodles first. Soak in cold water for 10 minutes.

Add appropriate amount of light soy sauce, salt, MSG, sugar and vinegar to mineral water, mix well, and refrigerate in a refrigerator. This is cold noodle soup.

How to make Northeastern cold noodles

Prepare cucumbers, tomatoes, coriander, chives, kimchi, and boil a few eggs.

Cut the cucumber into shreds, the tomato into slices, the coriander into sections, the green onion into minced pieces, and then mince some garlic.

Rub the soaked cold noodles with your hands and rub off all the stuck parts.

Boil water in a pot and blanch the cold noodles for 2 minutes.

Then remove from the water and cool in cold water.

1. Stewed beef: Because beef is not easy to cook, we cook the beef first. This time I used beef tenderloin (try to choose lean meat), put it in a pot with cold water, add ginger slices, star anise, chili, and cinnamon, and cook until boiling. Take out the beef, add water, spices (same as before), soy sauce, sugar, and a little cooking wine and put them into the electric pressure cooker. The water should cover the beef.

2. Eggs: Soak the raw eggs in cold water for 15 minutes, then boil them in cold water for 5 minutes after boiling.

3. Pickled spicy cabbage: You can make spicy cabbage when stewing beef. Wash and peel the cabbage leaves layer by layer, add salt and spread evenly layer by layer, fold them up, cover with plastic wrap and put in the refrigerator (Picture 3). Wait for about 1 hour until the cabbage has finished draining water, then take out and cut into sections.

4. Making chili sauce: Here is a great tip for making chili sauce. First, cut the beef into cubes. Add a little oil to the pan and stir-fry the diced beef. Add chili powder, then add 1 tablespoon of Sprite (depending on the quantity), mix well, sprinkle with some white sesame seeds, and the delicious chili sauce is ready. It's very simple, right?

5. The kimchi is done: add sugar, a little salt, the chili sauce we prepared, and white vinegar to the kimchi after it is out of water, rub the flavor into the cabbage, and marinate it for half an hour. The crispy, sour, spicy and sweet homemade simple cabbage is ok.

6. Cold noodle soup = beef soup + garlic and ginger water + pear juice > Beef soup: After the cooked beef soup has cooled, remove the floating oil and set aside.

7. Garlic and ginger water: Chop the garlic and ginger into small pieces, add salt to make it easier to release water. Take a clean bowl and add cold boiled water/mineral water, wrap the minced garlic and ginger in gauze and immerse them in water, repeat the process, squeeze out the juice, and add a little white vinegar.

8. Pear juice: blend the pears into juice.

9. Mix beef broth and garlic and ginger water in a ratio of 4:6 (the original formula is 3:7, which I think is a bit heavy), then add pear juice, salt and sugar according to personal taste.

10. Cook noodles: I cook the noodles in hot water for 3 minutes, then rinse with cold water and drain. The noodles should be cooked last, otherwise they will not taste good.

11. Assemble: Put the noodles in a bowl and add cold noodle soup. Top with apple slices, pear slices, beef slices, coriander, kimchi, cucumber shreds, and hard-boiled eggs. Add a little chili sauce in the middle and sprinkle with sesame seeds. If you have ice at home, you can sprinkle some crushed ice on it to keep it cool.
