The simplest way to make minced meat vermicelli

Minced meat vermicelli is also called "ants climbing trees" by us. This home-cooked delicacy is a traditional Sichuan cuisine, mainly made with vermicelli and minced meat. Ants Climbing a Tree is usually made with vermicelli (or rice noodles) and minced meat as the main ingredients, supplemented by carrots, ginger, onions, bean paste and other auxiliary ingredients. After the dish is cooked, it has a light taste, is smooth and delicious, has a bright red color, and has a unique flavor.

Ingredients

1 handful of sweet potato vermicelli, appropriate amount of minced meat, appropriate amount of ginger, 1 tablespoon of bean paste, 2 cloves of garlic, appropriate amount of chopped green onion.

1. Prepare the ingredients and soak the vermicelli in warm water in advance.

2. Heat oil in a wok, add minced ginger and garlic and stir-fry until fragrant.

3. Add the bean paste and minced pork and stir-fry until fragrant, then add light soy sauce and dark soy sauce and stir well.

4. Add vermicelli and 1 small bowl of broth or water into the pot and cook until the soup is almost dry.

5. Add salt, green onion and chicken essence to season.

50g vermicelli, 150g minced meat, appropriate amount of green and red peppers, appropriate amount of shallots, appropriate amount of onion, ginger and garlic, 1 tablespoon of bean paste, 2 teaspoons of cooking wine, 1 teaspoon of light soy sauce, 1 teaspoon of dark soy sauce, a little sugar, 6 tablespoons of water, 2 tablespoons of chicken juice, and 2 tablespoons of peanut oil.

1. Soak the vermicelli in advance until soft; mince the green onion, ginger and garlic; cut the green and red peppers into slices obliquely, and chop the shallots; chop the spicy bean paste; dilute the chicken sauce with water and set aside.

2. Heat a wok, add cold oil and sauté chopped green onion, ginger and garlic.

3. Add the minced meat and stir-fry until it changes color.

4. Add cooking wine and stir-fry evenly.

5. Take out the softened vermicelli and add it to the pot.

6. After stir-frying evenly, add light soy sauce and a little white sugar, and stir-fry evenly again.

7. Add diluted chicken sauce and stir fry evenly.

8. After boiling over high heat, turn to low heat, cover the pot and simmer, checking and stirring frequently in the middle to avoid burning.

9. When the soup is almost done, add soy sauce and stir-fry evenly; finally, add green and red peppers and scallion leaves, turn off the heat and it’s done.

Vermicelli, minced meat, carrots, green peppers, ginger and onions, bean paste, sugar, chicken essence, and sesame oil.

1. Soak the vermicelli (usually sweet potato vermicelli) in cold water until it is soft. Take it out and make sure to soak and drain it in advance, otherwise it will easily stick to the pot.

2. Chop carrots, green peppers, ginger and green onions.

3. Stir-fry one tablespoon of red bean paste over low heat until the oil turns red when you lift a spatula.

4. Add the minced meat and stir-fry until it turns white, then add a teaspoon of sugar and chopped ginger and scallion.

5. Add water, not too much, just enough to reach the edge of the minced meat, about half a bowl of water. Add vermicelli.

6. Cook for a while, until the water is almost dry, stir with a spatula to collect the juice, add green pepper, chicken essence, sesame oil, and turn off the heat.
