If you want to make egg pancakes that are soft and fragrant, there are two most important points: the batter should be of appropriate thickness and the fire should be neither too high nor too low (the pancake should not become mushy).

Ingredients: flour, eggs, chopped green onions (Chinese toon, green pepper, etc.), five-spice powder, refined salt, sesame oil (1 or 2 drops) Now let's talk about how to make the batter: Grab two handfuls of noodles and put them in a large bowl or basin, add appropriate amount of water and mix into a paste.

(The consistency of the batter should be such that when you pick it up with chopsticks, the batter does not hang very long on the chopsticks, and generally drips down about 1 or 2 centimeters, or it can be slightly thicker)

The batter should be evenly beaten, without any dry flour.

Add five-spice powder, salt, and an egg, and mix well again.

Add chopped green onions, Chinese toon, green pepper and other vegetables you like (must be easy to cook). Now let's talk about how to control the heat: turn on the gas stove, put on a wok (or frying pan), adjust the heat to medium to low, put a small spoonful of oil (the rice spoon for eating), heat it until you reach your hand over the pot (25-30 cm above the bottom of the pot; if it is a wok, 5-10 cm above the edge of the pot), and when you feel your hand is a little hot, the temperature is just right, then spread the oil around the pot. After the preparations are done, start making the egg pancakes

Use a large soup spoon to scoop 1-2 spoons into the pot, hold the handle with your hand to let the batter spread evenly around (also to make the noodles thinner), then cover the pot and simmer for a while (if the fire is properly controlled, you can wait for one minute), then open it. When you see the color of the pancake surface change and there are some raised areas, you can turn the pancake over to the other side (this time should not exceed 1 minute). Now, the fragrant egg pancake can be placed on a plate and eaten.
