How to clean shrimp heads

There is a relatively large black shadow on the head of fresh shrimp, which is the shrimp's stomach. The mud intestine runs through its back from head to tail, but the back half is the darkest in color, which is where the shrimp feces are concentrated. Here are the steps to prepare fresh shrimp:

Step 1: Cut off the shrimp head at a 45-degree angle, starting from the shrimp brain downwards.

Step 2: Use scissors to pick out the shrimp brain. Right next to the front of the shrimp brain is the shrimp roe, which is a good thing. If there is shrimp roe, be careful when picking it and try to keep it.

Step 3: Gently pull out the shrimp brain, and part of the shrimp intestine will be pulled out.

Step 4: Cut off the shrimp tail, leaving a little meat at the tail when cutting, because there may be a sphincter here, and if you don’t cut more, the shrimp intestine cannot be squeezed out.

Step 5: Squeeze the shrimp intestines. Pinch the shrimp's back with your index finger and thumb, and push towards the tail, and the shrimp intestines will come out.

Finally, clean it and you can cook the fresh shrimp. In addition, if you want to braise or season with salt and pepper, you can simply use scissors to cut open the back of the fresh shrimp and remove the dirt. This will make the shrimp more flavorful.

How to process prawns

1. Wash the prawns, fill a large basin with clean water, grab the tail of the prawns with your hands, and use a brush to clean the abdomen and head of the prawns.

2. Cut off the shrimp claws and antennae on the prawns’ heads.

3. Use your hands to grab the middle one of the three tails of the prawn and pull out the intestines.

4. Wash repeatedly with water. When clear water comes out, the prawns are clean.

How to eat prawns

1. Wear disposable plastic gloves on both hands and prepare napkins in front of you.

2. Hold the shrimp away from your face, break off the two large claws of the shrimp, and chew it.

3. Hold the shrimp head and tail with both hands, break off the head shell, and then peel off the tail shell to eat the meat.

How to process shrimp

Because of the mud and shrimp threads, these larger shrimps will taste worse if they are not processed before eating. Moreover, its shell is relatively hard and inconvenient to eat, and it will prick your mouth.

1. First, we need to use scissors to remove the big spines on the shrimp head, which are very hard.

2. After cutting, there will be a hole where the thorn was originally located. Insert the scissors in here, use the tip of the scissors to clamp the sandbag inside, and pull it out.

3. Just pull it out like this.

4. Then open the back of the shrimp. The backs of the prawns must be opened to remove the shrimp threads so that the dish can be seasoned better and the shape of the dish will also be better.

5. Pick out the shrimp thread inside and that’s it. (P.S. To remove the shrimp thread from very small shrimps, you can use a toothpick to insert it from the second section of the shrimp and pick out the shrimp thread)

6. Finally, cut off the shrimp's legs. If you want to make it easier to eat, you can also remove the whiskers and tail in the front. If you like shrimps with whiskers and tails intact, you can leave them intact and just remove the whiskers that are too long.
