What is the method of pickling beans at home?

Ingredients

10 catties lentils

Half a pound of cooking oil

A packet of soy sauce

Salt and sugar as appropriate

A small amount of green pepper, Sichuan pepper, star anise and other spices.

The lentils I'm talking about here are the kind that are very wide and flat, with not particularly thick flesh, the kind that have bean vines that can climb very far and are particularly good at grafting. They are not the long, thin, thick-fleshed lentils that we often see in restaurants.

1. Wash and remove tendons.

Wash the lentils, then remove the tendons on both sides. Because the tendons are particularly difficult to chew, we have to remove them before marinating to avoid affecting the taste.

2. Set aside the water.

Boil water, put the washed lentils in and stir them over. Just once is enough. If you stir them over too long, the lentils will become chewy. Then remove from the water and drain. While braising, prepare the green peppers in the same way and use them as seasoning.

3. Heat the vegetable oil.

Put vegetable oil (it can be soybean oil or peanut oil, but peanut oil is better) into the pot and heat it, just like we usually pour in oil and heat it when cooking. Pour the cooked vegetable oil into the container where you will pickle the lentils, let it cool, and then add the soy sauce.

4. Start pickling.

Put the drained lentils into a container filled with oil, then add salt and sugar. The amount of sugar can be adjusted according to personal taste. Then add pepper, star anise and other spices and stir well. If you are worried that it is too salty, you can put a little salt for the first time. After marinating for a few days, add more salt according to your taste and saltiness.

5. The pickled lentils can be eaten after about ten days. They taste crisp, delicious and sweet. They are a side dish to increase appetite on the daily dinner table. If you have learned it, you might as well try it.
