1. Prepare the ingredients

1 pound of thin noodles, 2 ounces of pork belly, 0.5 pound of bean sprouts, 0.5 pound of celery, a little oil and salt

1. Blanch bean sprouts and celery in boiling water and set aside;

2. Prepare the pork belly, cut off the fat and put it into the pan to fry. After the oil comes out, fry the rest of the lean meat until it is half done;

3. Take a clean wok (a larger one) and brush a layer of sesame oil on it first.

4. Add water, about one third. Then take 4-6 chopsticks and add them to the water surface, keeping them at a certain distance from the water surface;

5. Spread the noodles evenly on the chopsticks, not too thick, and try to spread the bean sprouts and celery evenly as well.

6. Cover the pot and steam over medium heat.

[Note] Never steam over high heat, otherwise the noodles will not be cooked through once the water dries up. If you want it to be oily, steam it longer; if you want it to be drier, steam it shorter. Time: 30-50 minutes.

3. How to prevent steamed noodles from sticking

When steaming the braised noodles, you can put some cooking oil or salad oil on the noodles to prevent them from sticking. Also, don’t put too much flour, as this will also make the noodles sticky.

4. Another method

1. Before putting the noodles into the steamer, evenly apply a layer of lard or vegetable oil on the steamer tray, and then put the noodles directly on it. Then, after the noodles are cooked, they will not stick to the tray, and the oil stains on the tray are easy to clean, saving the need for a tray cloth, killing two birds with one stone.

2. Steam the noodles first, then wait until the water boils and steam them over high heat. Be sure to wait until the water boils before putting it in the pot, otherwise it will easily stick.

3. When steaming noodles, you can also put a layer of bean sprouts underneath. You can put it in or not.

4. After the noodles are steamed, be sure to shake them apart with chopsticks. Let it dry.

5. Then prepare the marinade. Make sure there is enough oil in the marinade, otherwise it will not taste good.

6. When putting the noodles in, there must not be any clumps. You must put them in slowly and stir with chopsticks to make sure each noodle is sticky to the brine. After mixing, the noodles are sticky to the oil, so you can eat them after steaming them for a few minutes. The noodles will be loose and not sticky.
