Do you need to blanch the mushrooms before frying?

When frying fresh mushrooms, you need to pay attention to tear all the mushrooms into small strips, and then marinate them with a small amount of flour. The mushrooms do not need to be fried with cold or hot water, they can be fried directly in the oil. Some people may cook the mushrooms in hot water in advance, but this is unnecessary, because the bacteria in the pre-cooked mushrooms will be destroyed, so it is better to fry them directly.

Ingredients for deep-fried mushrooms : starch, flour, salt, five-spice powder, water, oyster mushrooms

Method 1. Wash a plate of oyster mushrooms and remove the roots

2. Blanch in boiling water for two minutes.

3. Remove and drain water

4. Squeeze out the moisture from the mushrooms and tear them into small strips

5. Mix starch and flour in a ratio of two to one, add salt, five-spice powder, water and mix well. The batter should not be too thin, otherwise it will not be able to hang on the mushrooms. It is best to use potato flour as starch, as it will be crispier and fluffier when fried.

6. Add oil to the pan, heat it up, then put the mushrooms dipped in batter into the pan and fry until golden brown. Then take them out and continue to heat the oil again, put the fried mushrooms in and fry them again. The second frying will make the mushrooms more crispy.

Tips

You can add chopped green onions, black pepper, cumin, etc. to the batter. Some people like to dip it in sauce after frying. It depends on personal taste and there is no hard and fast rule.
